This kit makes an exceptionally moist and not-too-sweet cake, which smells like literal heaven as it turns golden in the oven. The baked cake has a satisfyingly dense crumb. The flavours of the lemon and strawberries work together to taste like summer (although this cake can be made all year round if you use frozen strawberries, which work just as well as fresh). This kit is vegan-friendly if you use dairy free milk and oil instead of butter.
- Ingredients: Organic Unbleached Wheat Flour, Caster Sugar, Icing Sugar (Sugar, Tapioca starch), Blanched Almond Meal, Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Corn Starch), Freeze-Dried Strawberry Slices (0.8%), Freeze-Dried Strawberry Powder (0.7%), Salt.
- This kit used to contain poppy seeds but due to ongoing supply issues these have been removed to keep stock flowing. Feel free to add poppy seeds back in the dry mix if you have them available.
- You will need 3/4 cup of milk, 1/2 cup of oil or melted butter, 1/4 cup of lemon juice, 1 cup of strawberries, 8 inch (20cm) cake tin.
- Any regular or dairy free milk will work. If using oil, use a neutral flavoured oil. You can use fresh or frozen strawberries.
